Coconut based Bottle Gourd

Coconut based dishes are absolutely delicious! Coconut - milk / grated coconut / cream adds a totally different texture to any dish.

Here is my take on bottle gourd / green gourd with coconut.

Coconut Based Bottle Gourd
  • 400 gms. - Bottled Gourd diced into 1 mm cubes
  • 1 tbsp. - Curry Leaves
  • 2 dry Red Chillies
  • 1tsp. - Black rai(mustard) seeds
  • 1 clove garlic - finely chopped
  • 3 tbsp. - grated coconut
  • salt to taste
  • 2 tbsp. - cooking oil
  • Pinch of red chilli powder and turmeric powder
  • 1/2 tsp.
  • In a frying pan add oil and add the chopped garlic. When the garlic turns golden add the red chilies, curry leaves and the black rai and sauté. When the curry leaves and black rai crackle, add the chopped bottle gourd.

  • In a small bowl, add the grated coconut and soak it in water.
  • When the bottle gourd starts to become soft and translucent, add salt, turmeric powder, red chilli powder and jeera powder. Toss the vegetable well.
  • Now add the soaked coconut and cook for about a minute.

Enjoy this delicious recipe with chapatti / rice / dosa.
