Kerala Style Pancakes or Love Letters

My mom used to make this as an evening snack all the time and its a household favorite.

When I started staying in the hostel in Kerala, one day my hostel mates were like 'Today we are having love letters for evening snacks'. I was like 'Woah!! Love Letters!! what is that??' They were like its the most awesome thing ever. When I went to the mess and found that its the same thing as what we called as Pancakes.



Ingredients:
For Pancake Batter

  • 1 egg
  • 1 cup flour
  • 1/2 cup milk
  • 1/2 cup water
  • 1 tsp sugar
  • pinch of salt
For Filling
  • 3/4 cup grated coconut
  • 2-3 Tbsp Sugar/Jaggery
  • 1/4 tsp Cardamom powder
Preparation:
  • For the filling just mix the coconut, sugar and cardamom powder.
  • Break the egg into a bowl and whisk it lightly.
  • Add flour, sugar and salt into the egg.
  • Slowly add the milk and water till it is of runny consistency.
  • Heat up a non stick pan and pour a tablespoon or two of the batter and using the spoon, spread the batter into a circular shape.


  • Cook it for a minute and then add one or two Tbsp of the coconut filling. Fold one half of the pancake over the filling and then the other. Gently press it so that both the folds stick.
  • Voila the pancakes are ready. Serve then hot. This one doesn't need any accompaniments. You can have it on its own.
