Spinach Pasta

Like Indian Food, Italian food comes with great flavors. Pasta is one of the most versatile foods available. According to Wikipedia both dried and fresh pasta come in a number of shapes and varieties, with 310 specific forms known variably by over 1300 names having been recently documented. 

Spinach and Pasta complement each other so well, we decided to bring to you our version of Spinach Pasta. It's simple, easy to cook and absolutely delicious!



Ingredients:

For the Spinach Puree
  • 750 gms fresh spinach leaves
  • 4-5 green chilies - diced
  • 1 tsp. garlic - grated
  • 1 onion - finely chopped
  • 4 tbsp. - olive oil
  • 2 tsp. - tomato puree
  • Salt & pepper
  • 2 tbsp. parmesan cheese - grated
  • 1 tbsp. - cream
For the Pasta
  • 500 gms - Spiral Pasta
Preparation:
  • Wash the spinach leaves well. Pressure cook the leaves without water. Allow the leaves to cool down. In a blender, add the green chilies and blend till a smooth puree.

  • Boil water in a boiling pan. When the water is boiling hot add the pasta and boil till it is cooked and ready. Note: Do not over cook the pasta else, it becomes soggy and breaks.
Types of Pasta
  • In a frying pan, add olive oil. When the oil is warm, add the garlic and sauté till a light flavor of garlic starts coming. Now add the onions and sauté till they are pink and translucent.
  • Add the tomato puree and sauté till the tomato puree releases the oil.

  • Add salt and pepper to the  onion and mix. Now add the pasta and mix well. The tomato puree will give it a nice reddish tinge. Add the spinach Puree and sauté till the water dries a little.
Garnishing:
  • Sprinkle grated parmesan cheese, oregano and chili flakes!

PS: This is a vegetarian version though you may add shredded chicken / chicken sausages in the Pasta!
