South Style Paneer Bhujia

I have been experimenting with Coconut Milk because I love it's taste. Here is our take on Paneer Bhujia with Coconut Milk. This dish is best enjoyed with jeera rice / plain roti.

Serves : 2

Ingredients:
  • Paneer / Cottage cheese - 150 gms, finely grated
  • Curry leaves - 10 - 12
  • Dry red chilies - 2/3
  • Mustard seeds - 1/2 tsp
  • Coconut milk - 4 tbsp.
  • Salt -  to taste
  • Onions - 1 small, finely chopped
  • Oil - 1 tsp.
  • Green chilly - 1 finely chopped

Preparation:
  • In a pan, add oil and allow the oil to heat up. Add dry red chili, curry leaves and mustard seeds.
  • When the mustard seeds crackle, add onions and green chilies and saute till the onions turn pink.
  • Add the grated cottage cheese or paneer and mix well. Now add the coconut milk. Make sure that the coconut milk only boils once, else it will curdle.
  • Remove from flame. Add salt and mix well!
